MIXED FRUIT TRIFLE

Ingredients:
  • 1 (1 ounce) package sugar-free vanilla pudding mix
  • 2 cups skim milk
  • 12 lady fingers
  • 3 TBS sugar-free strawberry spread
  • 1 cup halved fresh strawberries
  • 1 cup diced fresh pineapple
  • 1â�„2 cup halved seedless green grapes
  • 1â�„2 cup halved seedless red grapes
  • 1 fresh strawberry (optional)
  • fresh mint spring (optional)
Prepare pudding using skim milk, cover and chill thoroughly. Tear lady fingers into bite size pieces and place half in 11�2 quart trifle bowl. Brush with melted strawberry spread. Combine strawberries, pineapple and grapes in a medium bowl. Place half fruit mixture over lady fingers. Top with half of the pudding. Repeat layers. Cover and chill.
