  • 1 large onion
  • 1 green onion
  • 3 pieces of fresh thyme
  • 3 cloves of garlic
  • 1 small green pepper
  • 3 pound whole chicken (cut into individual pieces)
  • salt
  • black pepper
  • 3 TBS jerk sauce
Chop onions, thyme, garlic and pepper. Mix together with chicken. Add salt and pepper to taste. Marinate in jerk sauce over night for about eight hours. Leave some sauce aside to baste the chicken with while it’s cooking. Bake at 375 degrees for one hour. Turn chicken over halfway through cooking.
