Entrees
Contributed by: Blanche Waller
Ingredients:
2 cups self-rising flour
2 tsp. sugar
12 cup shortening
12 cup milk or buttermilk
Toppings:
1 large can refried beans
2 lbs. ground beef, browned and drained
1 box of Spanish rice, prepared according to box instructions
2 cups cheese, shredded
4 cups lettuce, shredded
1 tomato, chopped
Salsa, sour cream and green onions (optional)
Heat oil in skillet or fryer. In medium bowl, stir together flour and sugar. Cut shortening with pastry blender until mixture looks like fine crumbs, then stir in milk. Roll into 12 medium-sized balls. Place dough on lightly floured surface. Knead gently each ball 5 or 6 times. Roll out each ball until thin, and then place into hot oil until golden brown (15 to 20 seconds). Take out of skillet or fryer and drain on paper towel.
After the bread is done, spread with refried beans, ground beef, rice, cheese, lettuce, tomato, salsa, sour cream and green onions.
