Apple crisp with macadamia nuts

  • 1/4 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup packed brown sugar
  • 2 TBS chopped macadamia nuts
  • 1/8 tsp. ground cinnamon
  • 2 1/2 TBS margarine, chilled
  • 5 cups of sliced cooking apples
  • 1 tsp. lemon juice
  • Canola oil cooking spray
  • 2 TBS apricot preserves
Preheat oven to 375 degrees. Combine flour, sugars, macadamia nuts and cinnamon. Cut in margarine until mixture resembles coarse meal. Set mixture aside.
Coat apple slices with lemon juice to prevent the apples from turning brown. Spray an 8-inch square baking dish with cooking spray and place apple slices in baking dish. Drop apricot preserves by teaspoonfuls onto the apple slices. Sprinkle the flour mixture evenly over the apple slices. Bake at 375 for 35 minutes or until golden and bubbly.
