Four-cheese Quiche
Eggs & Cheese

Ingredients:
  • 1â�„2 cup boiling water
  • 1â�„2 cup vegetable oil
  • 2 cups flour
  • 1â�„4 teaspoon salt and pinch of salt, divided
  • 4 eggs
  • 1 pint heavy cream
  • 1 teaspoon freshly ground black pepper
  • 1â�„4 teaspoon cayenne pepper
  • 1â�„4 teaspoon nutmeg
  • 1â�„2 cup shredded Swiss cheese
  • 1â�„2 cup shredded sharp cheddar cheese
  • 1â�„2 cup crumbled feta cheese
  • 1â�„2 cup grated Romano cheese
Combine water, oil, flour and 1�4 teaspoon of salt and press into large quiche pan or 24 mini muffin wells. Combine cheeses and put into prepared shell(s).
Combine eggs, cream, pinch of salt and remaining seasonings, then whisk for 1 minute. Pour liquid over cheese. Bake at 425 degrees for 15 minutes then reduce to 350 degrees and bake 45 minutes.
