Fruit Cocktail Cake

  • 2 cups plain flour, sifted
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 can fruit cocktail with juice
  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • Topping:
  • 1stick margarine
  • 1 cup evaporated milk
  • 1 cup brown sugar
  • 1 tsp. vanilla extract
  • 1 cup flaked coconut
  • 1 cup chopped pecans or walnuts
Preheat oven to 350 degrees. Mix dry ingredients well; add fruit cocktail with juice and vanilla. Add eggs and mix well. Pour into 9x13 baking dish. Bake for 30 to 35 minutes. Spoon on topping while cake is warm.

In medium saucepan, heat margarine, milk and sugar to boiling point, stirring to keep from sticking. Cook about 5 minutes or until mixture begins to thicken. Add vanilla, coconut and nuts. Mix well. Spread on top of warm cake.
