  • 1 oz. shoe peg corn
  • 1 oz. lima beans
  • 1 TBS diced onions
  • 1 TBS diced red pepper
  • 1 TBS chopped tarragon
  • 2 TBS whole butter
In a saucepan with a minimal amount of oil, combine and sauté corn, lima beans, onions and red pepper. Toss for seven minutes on low heat to carmelize, then fold in the butter and tarragon. Season to taste.
