MOCK POTATO SALAD
Vegetables & Side Dishes

Ingredients:
  • 1 cauliflower (chopped and steamed until crispy and tender)
  • 1/2 cup light mayonaise
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1 TBS. mustard
  • 1/4 cup chopped dill pickles
  • 4 boiled eggs, chopped
  • 2 tsp. “McCormick Salad Supremeâ€�
Wash cauliflower. Chop it and steam it until crispy and tender. Let cook. Stir all ingredients together. Stir the mixture into the cauliflower pieces. Refrigerate overnight.
