“Not So Bad for You� Chocolate Chip Cookies

  • 1/2 cup butter
  • 1/4 cup canola oil
  • 1 cup dark brown sugar, firmly packed
  • 1 tsp. vanilla
  • 2 eggs
  • 1 3/4 cups whole wheat flour
  • 1/2 cup ground flax seed
  • 1 TBS baking powder
  • 1/2 tsp. salt
  • 2 cups 60% cacao chocolate chips (or semi-sweet)
Cream butter, oil, and sugar at high speed with a mixer. Add vanilla and eggs; beat at medium speed until smooth and creamy. Combine dry ingredients in a separate bowl; add to butter/sugar/egg mixture gradually with mixer at low speed. Gently mix in chocolate chips last. Spoon onto baking sheet and bake at 375 degrees for about 8 minutes or until lightly browned. You may add chopped nuts to this recipe if you like them in your cookies.
Another version of this recipe is to double it, using a one-pound box of dark brown sugar instead of packing it into a measuring cup. Use 3 cups unbleached flour and 1/2 cup each ground flax seed, wheat germ and wheat bran.
