  • 10 lbs. Russett potatoes
  • 15 boiled eggs
  • 1 large onion
  • 32 oz. mayonnaise
  • 36 oz. sweet relish
  • 3 TBS sugar
  • 1/2 cup mustard
Dice potatoes. Boil them for 30 minutes or until they can be pierced with a fork. Drain the water out. Chill potatoes.
Chop boiled eggs and onion. Mix with mayonnaise, relish, sugar and mustard. Pour this mixture over diced potatoes and mix gently.
