SIMMERED OKRA AND TOMATOES IN GINGER
Vegetables & Side Dishes

Ingredients:
  • 1 TBS vegetable oil or extra virgin olive oil
  • 1 large onion
  • 1 clove garlic, minced
  • 1 large tomato
  • 11â�„2 to 2 tsp. fresh ginger, minced or 1 tsp. ginger powder
  • 1 tsp red pepper flakes
  • 8 oz. chicken broth
  • 1 pound okra, cleaned, tops removed and cut into 1-inch pieces
Heat the oil in a large skillet over medium high heat. Peel onion and cut into julienne strips. Sauté the onion strips about 8 minutes or until browned. Add garlic and stir. Cut tomato into strips. Add tomato, ginger and red pepper flakes and cook about 5 minutes. When tomatoes begin to brown, add the chicken broth and okra. Simmer about 10-15 minutes or until okra is tender. Serve immediately.
