CORN AND CRAWFISH BISQUE

Ingredients:
  • 1 medium onion
  • 1 stick butter, cut in half
  • 1 to 2 tsp. cayenne pepper
  • 3 TBS Paul Prudhomme’s Seafood Magic
  • 1 lb. crawfish tails (or lump crab meat or shrimp)
  • 1â�„4 cup flour
  • 1 quart half-and-half
  • 2 cans cream of potato soup
  • 1 can (15 oz.) cream-style corn
  • 1 can (15 oz.) regular corn
Chop onion and saute with 1�2 stick butter in a large pot. Sprinkle cayenne pepper lightly over onions. Add Seafood Magic. Add crawfish tails and remaining butter. Stir well, and slowly add flour. Cook until all ingredients are combined. Add 1�2 quart half and half and stir for 10 minutes. Add potato soup. Stir, then mix in creamed corn and the rest of the half and half. Cover and simmer for 30 minutes. Add regular corn and stir. Additional Seafood Magic and salt and pepper may be added for taste.
