  • 3-4 cups pumpkin, cooked and mashed
  • 1 onion
  • 2 TBS olive oil
  • 1 bell pepper, optional
To cook pumpkin, clean one pumpkin and peel it. Cook until soft, then mash it with a mixer.
Re-heat the mashed pumpkin in a large saucepan. Thinly slice an onion (and optional pepper). Fry the onion (and optional pepper) in olive oil until brown. Add brown onions (and peppers if chosen) to the pumpkins and mix in. Add coarse salt and fresh pepper to taste.
