  • 2 TBS butter
  • 2 TBS extra virgin olive oil
  • 2 to 3 small shallots, sliced
  • 11â�„2 pounds assorted mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 TBS fresh thyme or 1â�„2 TBS dried thyme
  • 1â�„2 tsp. salt
  • 1â�„4 tsp. ground black pepper
In a large saucepan over medium heat, melt butter with olive oil. Add shallots and cook 3-4 minutes or until soft. Add mushrooms and cook 6-8 minutes or until brown and tender. Add garlic, thyme, salt and pepper and cook 3-4 minutes more.
