Vegetables & Side Dishes

  • 4 TBS corn oil
  • 2 cups rice
  • 1â�„2 tomato
  • 1â�„4 onion
  • 1â�„2 sazonador de pollo (chicken seasoning)
  • 2 cups water
  • 1â�„2 cup mixed diced vegetables (such as corn, peas, carrots and green beans)
Wash and rinse rice thoroughly.
In a blender, blend tomato, onion and seasoning.
Heat corn oil in a pan over medium heat. Spoon the rice into the corn oil and cook the rice until the grains begin to turn from translucent to white, but don’t let them brown. Add 2 cups water and the sauce. Stir and cover the pan. Cook for 10 minutes (don’t let it boil). Uncover, stir, add the vegetables, cover and cook for 10 minutes more.
