SALVADORENAN STYLE RICE
Vegetables & Side Dishes

4 TBS corn oil
2 cups rice
1â�„2 sazonador de pollo (chicken seasoning)
2 cups water
1â�„2 cup mixed diced vegetables (such as corn, peas, carrots and green beans)
Wash and rinse rice thoroughly.
In a blender, blend tomato, onion and seasoning.
Heat corn oil in a pan over medium heat. Spoon the rice into the corn oil and cook the rice until the grains begin to turn from translucent to white, but donâ€™t let them brown. Add 2 cups water and the sauce. Stir and cover the pan. Cook for 10 minutes (donâ€™t let it boil). Uncover, stir, add the vegetables, cover and cook for 10 minutes more.
