HEARTY KALE AND NAVY BEAN SOUP

Ingredients:
  • 1 cup onions, chopped
  • 2 medium garlic cloves, minced
  • 5 cups water
  • 2 cups cubed potatoes
  • 2 cans navy beans or great northern beans
  • 3 cups chopped kale, packed
  • 1 1/4 tsp. salt
  • 1 tsp. cumin
  • 2 TBS debittered Brewers yeast
  • 1/4 tsp. cayenne pepper, optional
In a large soup pot, combine first four ingredients and bring to a boil; reduce heat. Cover and lightly boil 10 minutes. Add remaining ingredients and cook covered for an additional 10-15 minutes or until potatoes are soft.
