  • 4 (5 oz.) boneless, skinless chicken breasts
  • 1â�„2 cup barbecue sauce
  • 1â�„4 cup real bacon bits
  • 1â�„2 cup 2% colby-monterey jack cheese, shredded
  • 1 (14 oz.) can Rotel tomatoes with green chilies, drained
  • sliced green onion
  • 1 pack taco seasoning
  • 1 can black beans, washed and drained
Preheat oven to 400 degrees. Pound out the chicken breasts to flatten and season each breast with taco seasoning.
In a skillet sprayed with non-stick cooking spray, cook the chicken over medium-low heat until no longer pink. Place each breast onto a baking sheet and top each with two tablespoons each of barbecue sauce, cheese and Rotel, and one tablespoon each of bacon bits and black beans. Bake until the cheese has melted, about three minutes.
