GOJI-JUJUBE CORNMUFFINS

Ingredients:
  • 1 (8.5 oz.) box corn muffin mix
  • 1/4 cup cup Goji berries (can be found in health food stores)
  • 1/4 cup red jujubes, chopped and pits removed OR
  • 1/4 cup dates, walnuts or fruit, chopped
  • 1/4 cup organic walnuts
Preheat oven to 400 degrees. Grease muffin tin or line with paper baking cups. Prepare corn muffin mix according to package directions; add fruit and walnuts. Bake 15-18 minutes; cool (as the berries will retain heat).
Goji berries and jujubes are both used to “nourish the blood,� Rhoday said. They are especially used in cases of anemia, low energy, and more recently in stroke patients.
