  • 1 lb. chicken breasts or tenderloins
  • 1/4 fresh pineapple crushed (put remainder aside)
  • 1 TBS organic soy sauce
  • 1 TBS sesame oil
  • 1 garlic clove (optional)
  • 1 tsp. lemon juice
  • Dash of white pepper
  • Dash of nutmeg
  • Salt and pepper to taste
  • 1 cup rice (black, brown, white or Jasmine)
  • 2 cups water
  • Walnuts to taste
Combine all ingredients except rice and water and let marinate at least 30 minutes or overnight. Combine the rice and water and cook for 18-20 minutes; drain and set aside. Cook marinated chicken in a small amount of sesame oil on medium heat until done; remove from heat. Add a teaspoon of oil with a dash of salt and pepper and pan-fry walnuts for one minute; sprinkle over chicken. Add remainder of pineapple as garnish and for digestion enhancement.
This dish represents all of the five flavors according to Chinese Medicine. The five flavors in the dish are sweet (pineapple), salty (soy sauce), sour (lemon), pungent (garlic and nutmeg) and bitter (pepper).
