COCONUT CREAM PIE

Ingredients:
  • 1â�„4 cup flour
  • 2â�„3 cup sugar
  • 1â�„4 tsp. salt
  • 1 cup coconut
  • 2 cups milk
  • 2 egg yolks, slightly beaten
  • 1â�„2 tsp. vanilla
  • 2 TBS melted butter
  • 9-inch pie crust
  • Meringue
Mix flour, sugar, salt and half of coconut. Gradually add milk. Cook until thick (about 10 minutes). Slowly add a small amount of hot mixture to egg yolks. Stir into hot mixture and cook five minutes more. Stir in vanilla and butter. Cool. Pour into pie crust. Cover with optional meringue; sprinkle coconut over meringue. Brown in 300-degree oven.
