SWEET POTATO DUMPLINGS

Ingredients:
  • 2 sticks margarine or butter
  • 2 cups water
  • 2 cups sugar
  • 1 can Hungry Jack biscuits
  • 2 long sweet potatoes
  • cinnamon and brown sugar to sprinkle
Melt butter in baking dish. Bring water and sugar to a boil.
Divide biscuit dough pieces in half. Slice potatoes 1�4 inch thick. Put one or two slices in each biscuit dough piece, wrapping dough around potatoes and and pinching edges together. Place filled biscuits pinched edge down in baking dish. Pour sugar water over biscuits. Sprinkle with cinnamon and brown sugar. Bake at 350 degrees for 45 minutes.
