Eggs & Cheese
Contributed by:
  • 4 cups frozen hash brown potatoes
  • 1â�„4 tsp. salt
  • 1â�„4 tsp. pepper
  • 3 TBS butter, divided
  • 2 TBS all-purpose flour
  • 3 beaten eggs
  • 1â�„2 cup milk
  • 1 medium onion, chopped
  • 1â�„2 cup chopped green pepper
  • 1â�„2 cup chopped mushrooms
  • 3â�„4 cup diced fully cooked ham
  • 1â�„2 cup shredded cheese
Mix all ingredients except cheese together. Refrigerate over night. Bake in a 10 X 13-inch baking dish for one hour (sprinkle cheese on top at last 20 minutes) at 350 degrees or until knife comes out clean.
