  • 2 slices bread*
  • Duke’s mayonnaise
  • salt and pepper
*Some swear by soggy: Plain white sandwich bread sops up the tomato juices. If you don’t like a mushy sandwich, use any variety of whole grain bread or a good, substantial hunk of homemade white bread which is less likely to get soggy. You also may toast the bread, which gives the sandwich more solid substance.
Slather mayonnaise on one or both pieces of white sandwich bread. Slice tomatoes about 1/3 inch thick. Don’t use the end slices on the sandwich. Arrange tomatoes evenly between the slices of bread. Sprinkle with salt and pepper.
