Vegetables & Side Dishes

  • 3 or 4 medium green tomatoes
  • 1 egg
  • flour, for dredging
  • salt and pepper, to taste
  • shortening
  • country (white) gravy
Slice tomatoes about 1/4 inch thick. Mix egg with 3 TBS. milk and put in a bowl. Put about 1/2 inch flour in another bowl or pie plate and sprinkle in salt and pepper liberally. Heat 1/2 inch shortening in skillet.
Dip tomato slices into egg mixture, then dredge in flour. Fry until brown on both sides. Drain on paper towels. Serve with country gravy.
