Sweet Potato Biscuits

  • 2 cups plain flour
  • * tsp. salt
  • 3 tsp. baking powder
  • 4 TBS sugar
  • 4 TBS cold butter
  • 1 cup cooked, mashed sweet potatoes
  • 3â�„4 cup buttermilk
Preheat oven to 450 degrees.
Sift dry ingredients. Cut cold butter into flour mixture with forks.
Combine sweet potatoes and milk. Add sweet potato mixture to dry ingredients and gently work with hands until dough holds together and forms delicate dough ball (may use extra flour or buttermilk to achieve right consistency).
Place dough on floured surface and pat into a round about 1 inch thick. Cut biscuits and place into pan sprayed with cooking spray.
Bake for 8-10 minutes.
