  • 1 cucumber
  • 1 large stalk celery
  • 1 carrot
  • 1 green pepper
  • 1â�„2 small onion (optional)
  • 1 envelope unflavored gelatin
  • 1â�„4 cup cold water
  • 1â�„4 cup boiling water
  • 2 cups light mayonnaise
  • 8 oz. light cream cheese
  • 1 tsp. salt
Peel and chop vegetables. Drain vegetables on paper towels.
In a bowl, stir gelatin into cold water, adding boiling water, salt, mayonnaise and cream cheese; mix well. Stir in vegetables. Chill four hours or overnight.
Spread on bread to make sandwiches just before serving.
