Pumpkin Puree
Vegetables & Side Dishes

Ingredients:
  • 1 small cooking pumpkin
  • 1 tablespoon vegetable oil
Cut pumpkin into quarters and remove seeds. Rub cut sides of pumpkin with vegetable oil and place on a baking sheet oiled sides up. Bake for one hour, or until pumpkin is fork tender and soft. Scoop pumpkin out of skin and puree in food processor.
