BUTTERMILK-COCONUT PIE

Ingredients:
  • 1â�„3 cup flour
  • 3 eggs
  • 1â�„2 cup butter, melted and cooled
  • 3â�„4 cup buttermilk
  • 1 tsp vanilla
  • 1 cup coconut
  • Prepared full-size or mini pie crusts
11�2 cups sugar
Preheat oven to 350 degrees.
Mix together sugar and flour, then add eggs, cooled butter, buttermilk and vanilla. Mix well, then stir in coconut.
Pour into pie crusts and bake at 350 degrees for 45 minutes.
