FAVA BEANS
Vegetables & Side Dishes

Ingredients:
  • 1 cup dried fava beans
  • 4 cups water
  • 1â�„2 tsp. salt
  • 2 tsp. ground cumin
  • 1 tsp. salt, divided
  • 1 TBS tahini (sesame seed paste) or 2 TBS sesame oil
  • Optional additions:
  • 1-2 hard-boiled eggs, chopped
  • 1â�„4 cup feta cheese
  • 1 tomato, diced
  • 1 medium onion, diced
  • 3-4 falafels (balls of ground, seasoned chick peas), crumbled
Soak fava beans in water over night.
Add salt. Cook until beans are soft. Drain off excess water, leaving about 1�2 cup water so beans won’t stick to bottom of pan if reheated. Stir in cumin, 1�2 tsp. salt and tahini or sesame oil and remove from heat. Add any or all of the optional additions.
Stir lightly to mix. Serve with pieces of pita bread.
