POTATO SALAD
Vegetables & Side Dishes

Ingredients:
  • 5 lbs. russett potatoes
  • 1â�„2 tsp. salt
  • 11â�„2 cups light Miracle Whip
  • 4 hard boiled eggs
  • 1â�„2 medium onion
  • 1â�„2 stalk celery
  • 1â�„4 green pepper
  • 1 TBS chopped red pepper
  • 2 TBS green relish
  • 1 TBS mustard
  • 1â�„4 tsp. celery seed
  • 1 TBS sugar (optional)
Dice potatoes. Boil potatoes in water to which 1�2 tsp. salt has been added.
When the potatoes pierce with a fork (but before they get too soft), remove from the water and drain.
Meanwhile, chop vegetables.
Mix vegetables and remaining ingredients with the potatoes. Chill until ready to serve.
