  • 1 cup sugar
  • 1â�„2 cup light corn syrup
  • 1 cup salted peanuts
  • 1 TBS butter
  • 1 tsp. vanilla
  • 1 tsp. baking soda
In a 11�2 quart casserole dish, stir together the sugar, corn syrup and peanuts. Microwave on high for 31�2 minutes and stir again.
Microwave for 31�2 more minutes, then remove and stir in butter and vanilla. Microwave on high one more minute.
Remove and stir in baking soda. Quickly continue to stir until light and foamy. Pour mixture onto lightly greased cookie sheet or ungreased nonstick cookie sheet. Let cool about 1 hour.
When cool, break into small pieces.
Microwave times will vary, so adjustments may have to be made.
