APPLESAUCE CAKE

Ingredients:
  • 2 eggs
  • 12â�„3 cup sugar
  • 1 cup butter
  • 4 tsp. baking soda
  • 3 cups applesauce
  • 2 tsp. cloves
  • 31â�„4 cups flour
  • 2 tsp. cinnamon
  • 1â�„2 tsp. nutmeg
  • 1â�„2 tsp. ginger
  • 2 tsp. lemon juice
  • 4 cups seedless raisins
  • 1 lb. dates
  • 2 cups black walnuts, chopped
  • 2 tsp. vanilla
Preheat oven to 350 degrees.
Mix eggs, sugar and butter together.
Dissolve baking soda in applesauce.
In a separate bowl, mix flour, spices, lemon juice, raisins, dates and nuts together.
Add egg mixture and vanilla to applesauce mixture and mix well. Stir in flour and nut mixture and mix well.
Pour into a greased tube pan and bake for 11�2 hours.
