  • 3-4 English muffins
  • 1 lb. sausage
  • 10 eggs
  • 1 can of mild Ro-tel tomatoes
  • 1 small sour cream
  • 2 cups shredded cheese
Separate English muffins. Place face up in the bottom of casserole dish. Brown and drain sausage. Spread over muffins.
Beat eggs, then mix in Ro-tel, sour cream and one cup of cheese. Pour over sausage and muffins. Sprinkle rest of cheese over top. Cover and place in refrigerator overnight.
Bake for 35-45 minutes at 350 degrees until done.
