CORN BREAD

Ingredients:
  • 1â�„4 cup all-purpose shortening
  • 1 egg
  • 11â�„4 cup whole milk
  • 2 cups self-rising corn meal
Preheat oven to 400 degrees. Measure out 1�4 cup shortening and put in baking pan. Let melt in the oven. Crack egg into bowl and add milk and corn meal. Remove pan from oven and swirl to coat the bottom of the pan with shortening. Pour shortening into batter. Mix batter with whip until smooth. Pour batter into pan and bake 25-30 minutes or until done.
For crackling corn bread: use same recipe and baking instructions as corn bread, adding 1 cup pork cracklings.
