RISOTTO
Vegetables & Side Dishes

Ingredients:
  • 2 cups Arborio rice
  • 21â�„2 cups vegetable or chicken stock, heated
  • 1 TBS pepper
  • pinch salt
Put rice in pan over medium-low heat. Pour in about 1�2 cup stock, wait until liquid is absorbed, then pour in another 1�.2 cup, and so on until all stock is used. Cook gently for 20-25 minutes, until the white in the rice kernels is gone. Season with salt and pepper.
