SWEET POTATO TARTS
1 large white sweet potato, cooked and mashed
1 cup sugar
1â�„2 cup evaporated milk
1â�„2 tsp. baking powder
1â�„4 cup melted butter (optional)
12-14 pre-made tart shells
Preheat oven to 375 degrees.
In a large mixing bowl, cream the sweet potato and sugar until smooth. Add eggs and mix well. Stir in milk (add more if batter is too thick). Blend in baking powder.
Add nutmeg, lemon and vanilla flavorings to taste. Blend in melted butter if desired. Batter should not be too thick.
Pour batter into tart shells and bake for 25 minutes or until golden brown.
