RED CABBAGE SLAW

Ingredients:
1�2 cup lemon juice
1 to 2 TBS olive oil
1 tsp. celery seed
Sugar substitute, to taste
Salt, to taste
1 medium onion, sliced
2 carrots, grated
3 cups red cabbage, cut into bite-size pieces
Whisk the lemon juice, oil, celery seed, sugar substitute and salt together in a bowl. Add the onions, carrots and cabbage to the mixture; mix well. Refrigerate overnight or for 24 hours, stirring occasionally.
