Cucumber Ribbon Salad
Vegetables & Side Dishes
Contributed by:
  • 1/2 seedless cucumber
  • 1/2 cup plain low-fat yogurt
  • 1/2 cup golden raisins
  • 2 TBS toasted slivered almonds
  • 2 TBS thinly sliced green onions
  • 2 1/4 tsp. chopped fresh mint leaves or 1/2 tsp. dried mint
  • 1 garlic clove, pressed
  • 1/8 tsp. pepper
Using a vegetable peeler, cut cucumber lengthwise into paper-thin slices; place in bowl of ice water 30 minutes until curled. Meanwhile, prepare yogurt dressing. In medium bowl combine remaining ingredients except salt to blend thoroughly.
Drain cucumber; pat dry. Place cucumber on 2 plates, dividing equally. Drizzle with dressing, dividing equally.
Note: Cucumber can be thinly sliced instead of cut into ribbons, if desired.
