  • 3 large tomatoes, peeled and chopped
  • 1 green bell pepper
  • 1 cucumber, peeled and chopped
  • 1 cup chopped celery
  • 1â�„2 cup chopped green onion
  • 4 cups tomato juice
  • 2 avocados, diced
  • 5 TBS red wine vinegar
  • 4 TBS olive oil
  • 2 tsp. salt
  • 1â�„2 tsp. pepper
Mix all ingredients in a non-metallic bowl; chill. Serve cold with sour cream and croutons.
